Light Organic Meyer Lemon Cheesecake
Ingredients:
1 Graham cracker crust 9 inch
2 egg whites
2 Whole eggs
1/2 cup evaporated milk or coconut milk
1 pint nonfat creamed cottage cheese
1/3 cup + 2T sugar
1 tablespoon grated organc meyer lemon rind
1/3 cup fresh organic meyer lemon juice
1/4 cup flour
Preheat oven to 300 degrees. In a blender or food processor, combine cottage cheese, egg white, whole eggs, evaporated milk, sugar, lemon rind, and lemon juice. Process the ingredients until smooth. Add the flour, and process the mixture a few seconds longer to blend ingredients thoroughly.
Pour filling into the prepared crust. Bake for 1 hr. or until filling is set. Cool in the pan or on a rack. Loosen the edges of the cake with a thin knife before removing pieces.
Meyer Lemon-Ginger Lemonade
2 C sugar
2 C water
2" piece of fresh ginger thinly sliced
2 C freshly squeezed organic meyer lemon juice
Additional cold water and ice to dilute lemonade.
Combine the sugar, water and ginger in a small pot and bring to a boil over medium heat, stirring constantly until the sugar disolves. Reduce heat to low and simmer about 15 min. until mixture is sightly thickened.
Meanwhile, squeeze the organic meyer lemon into a pitcher. Strain the ginger-infused sugar syrup into the lemon juice then top off with 2-3 cups of cold water or add water to taste. Chill, serve over ice and garnish with lemon slices.
Organic Meyer Lemon Drop Martini
2 organic meyer lemons juiced (1 shot lemon juice)
2 tablespoons sugar
2 mint leaves
2 shots vodka
Mix all together in a shaker-container. Dip rims of glasses in lemon juice then in sugar
Fill glasses
Makes 2 servings..
