Light Meyer Lemon Cheesecake
Ingredients:
1 Graham cracker crust 9 inch
2 egg whites
2 Whole eggs
1/2 cup evaporated milk or coconut milk
1 pint nonfat creamed cottage cheese
1/3 cup + 2T sugar
1 tablespoon grated meyer lemon rind
1/3 cup fresh meyer lemon juice
1/4 cup flour
Preheat oven to 300 degrees. In a blender or food processor, combine cottage cheese, egg white, whole eggs, evaporated milk, sugar, lemon rind, and lemon juice. Process the ingredients until smooth. Add the flour, and process the mixture a few seconds longer to blend ingredients thoroughly.
Pour filling into the prepared crust. Bake for 1 hr. or until filling is set. Cool in the pan or on a rack. Loosen the edges of the cake with a thin knife before removing pieces.
Meyer Lemon-Ginger Lemonade
2 C sugar
2 C water
2" piece of fresh ginger thinly sliced
2 C freshly squeezed meyer lemon juice
Additional cold water and ice to dilute lemonade.
Combine the sugar, water and ginger in a small pot and bring to a boil over medium heat, stirring constantly until the sugar disolves. Reduce heat to low and simmer about 15 min. until mixture is sightly thickened.
Meanwhile, squeeze the meyer lemon into a pitcher. Strain the ginger-infused sugar syrup into the lemon juice then top off with 2-3 cups of cold water or add water to taste. Chill, serve over ice and garnish with lemon slices.
Serves 2

Meyer Lemon Vinaigrette
2 Meyer lemons(zest from one juice from both)
1-1.5 T honey
2 T champaigne vinegar
Pinch of Salt
Ground peper
Combine all ingrediants. Shake well. Enjoy!
Meyer Lemon Drop Martini
2 Meyer lemons juiced (1 shot lemon juice)
2 tablespoons sugar
2 mint leaves
2 shots vodka
Mix all together in a shaker-container. Dip rims of glasses in lemon juice then in sugar
Fill glasses
Makes 2 servings.
Meyer Lemon Sorbet
2 cups sugar
1/2 cup meyer lemon juice
2 tsp. meyer lemon zest
4 cups buttermilk (this is the key; don't use regular milk or yogurt
-- it's the tang in the buttermilk that makes this recipe work)
Mix first 3 ingredients together until sugar has dissolved. Then add
the buttermilk. Stir to mix well and refrigerate 4 hours or
overnight. (don't skip this step; for some reason it really makes a
difference)
Put the mixture into an ice cream maker and finish according to
manufacturer's instructions (usually half an hour). Cuisinart makes a
great one and it's cheap. ($40)
You can serve it immediately, in which case it will be a bit soft. Or
freeze until harder and serve anytime.
