I have preserved the lemons and they look really nice in the jars. I have already given some to enthusiastic recipients. I had to squeeze some of the lemons for juice to top up the jars, so I ground the rinds in the food processor and froze them in small containers to use later in salads, on vegetables, in breads, etc. I didn't waste a thing, they are so delicious.
